Preparation method : cook in boiling water over low heat for the time indicated on the package with a drizzle of extra virgin olive oil. During cooking the product tends to form foam.

Traditional legumes can cause bloating because they contain oligosaccharides — complex sugars that our gut struggles to digest.

LEGÙ® legumes are different. We use a 4-step process starting from the whole legume: extended soaking, steam cooking, low-temperature drying, and only then grinding. This process naturally reduces oligosaccharides and makes our products significantly more digestible.

Do LEGÙ® products cause bloating?

This is the most common question we receive. Traditional legumes can cause bloating due to oligosaccharides, complex sugars that our gut struggles to digest. LEGÙ® products are designed to be significantly more digestible thanks to our exclusive process: legumes are first dehulled (removing the skin, the main cause of bloating), then steam-cooked to reduce anti-nutrients, and finally dried at low temperature to preserve nutrients. Only after this treatment are they milled into flour. The result is a product that retains all the nutritional benefits of legumes with significantly improved digestibility.

What is the difference between LEGÙ® and the legume pasta I find in supermarkets?

Most legume pastas on the market use flour from raw legumes, simply milled and extruded. LEGÙ® starts from the whole legume and puts it through a 4-stage process — prolonged soaking, steam cooking, low-temperature drying, and only then milling. This process naturally reduces oligosaccharides and anti-nutrients, making our products more digestible, tastier, and with a lower glycaemic index. In addition, we only use 100% Italian legumes grown in Puglia, Sicily, Marche, Abruzzo and Tuscany.

Are LEGÙ® products suitable for coeliacs?

Yes. All LEGÙ® products are certified gluten-free and regularly notified to the Italian Ministry of Health (SSN). Our facility works exclusively with gluten-free ingredients, eliminating any risk of cross-contamination. We are also an official partner of AIC Lombardia (Italian Coeliac Association) with a dedicated agreement for its members.

Can I use regional SSN coeliac vouchers to buy on legu.it?

At the moment, purchasing with regional coeliac vouchers is not available directly on our e-commerce. However, you can find LEGÙ® products in accredited pharmacies and specialist gluten-free shops where vouchers can be used. How much protein and fibre do LEGÙ® products contain?

Values vary by product, but LEGÙ® 100% legume pasta indicatively contains up to 25g of protein and 15g of fibre per 100g of dry product — significantly higher values than traditional pasta (around 13g protein and 3g fibre). A 50g serving of LEGÙ® pasta provides about 12g of plant protein, the nutritional equivalent of a main protein course. Legumes also contain iron, zinc, magnesium and B vitamins.

Are LEGÙ® products suitable for vegans and vegetarians?

Yes, all LEGÙ® products are 100% plant-based. They contain no ingredients of animal origin — no eggs, milk, butter or derivatives. They are perfect for anyone following a vegan, vegetarian or flexitarian diet. The combination of several legumes in our recipes is designed to offer the most complete amino acid profile possible from exclusively plant sources.

How do you cook LEGÙ® pasta? How long does it take?

LEGÙ® pasta is ready in under 5 minutes. Our recommendation is the risotto method: in a low pan, add half a glass of water with a pinch of salt and a drizzle of extra virgin olive oil. When it boils, add the pasta, stir and cover for 2-3 minutes. You can add vegetables or tomato sauce. It can also be boiled in water like traditional pasta, but the risotto method better preserves nutrients and flavour. The recommended serving is 50g, which becomes about 120g once cooked.

How much does shipping cost and how long will my order take?

Shipping within Italy is free for orders over €39. For smaller orders, shipping costs €7.90. We ship with BRT courier: in 90% of cases delivery happens within 24 hours of dispatch (48-72h for islands and remote areas). We also ship across Europe — costs vary by country. Orders are dispatched within 24 working hours after payment confirmation.
